A quick and healthy pasta dinner with lots of vegetables!
Recipe adapted from Recipetineats
Ingredients:
1 tbsp of olive oil
2 cloves of garlic
1 onion
1 zucchini
1 bell pepper
1 broccoli head
1 can of corn
250g of penne pasta (amount given in FFB)
1 can of tomato paste
1 tbsp of Italian herb mix
1 tsp of garlic powder
1/2 tsp of red pepper flakes
Recipe:
Heat oil in a large pot over medium. Add garlic and onion. Cook slowly for 3 to 4 minutes until the onion is translucent.
Turn heat up to medium high, add zucchini and bell pepper. Cook for 1.5 minutes.
Add remaining ingredients EXCEPT pasta and broccoli. Stir until tomato paste dissolves.
When liquid starts bubbling, lower heat to medium. Add pasta and broccoli, then stir.
Place lid on and cook for 5 minutes.
Remove lid. Cook for another 4 to 5 minutes, stirring frequently, until pasta is perfectly cooked through and most of the liquid has been absorbed by the pasta.
Serve immediately. Don't leave leftovers in the pot, residual heat will overcook the pasta so transfer into a serving dish.
